Today, we're thrilled to introduce you to BLAS, a unique dining haven created by Helen and her dedicated team. Nestled in the charming town of Ammanford, BLAS stands out not only for its diverse and delectable menu but also for its warm, community-driven spirit.
In this interview, we explore the inspirations behind BLAS, the challenges and triumphs of bringing a visionary dining experience to life, and the unwavering commitment to quality and local support. Join us as we chat with Stefan about their journey, their love for coffee, and the special place they’ve created.

WHAT INSPIRES YOU?
I would say it’s largely about creating a place you’d love to visit yourself. When you enter the hospitality industry, you aim to craft an environment where you’d want to go. Everything at BLAS is designed as a place where Helen (the owner) and I would enjoy food, coffee, relaxing, and having a drink. Seeing the results you envisioned from the start is incredibly rewarding.
IN TERMS OF BEING INSPIRED BY CITIES; IS THERE ONE PLACE THAT INSPIRES YOU?
It has to be London. We attend many trade shows and events there, and the city's industry is ahead of anything we’ve seen. London is full of diverse ideas and businesses that inspire us. We never return from London without new ideas for Blas. For those not in the hospitality sector, it might be hard to appreciate the finer details we notice, like crockery, furniture, and decor. London is the place to go for inspiration!
I’ve got a party trick when dining out with my family: I can guess the make of the crockery. They find it quite entertaining, though it might be a bit embarrassing.
WHAT LED YOU TO BE A PART OF BLAS?
Helen has been in the pub trade for a long time, and I joined the team when they had a pub. There was a lack of diverse dining options locally—everything was pub grub. We saw a need for something like Blas, offering varied food in a different environment. The unique garden was also a big draw. The building, originally a chip shop and house, required significant renovation. Starting with a clear vision, we now have about 140 covers, including the upstairs. When the weather is nice, our garden can seat 40-50 more.
WHAT MADE YOU CHOOSE COALTOWN?
First and for most the products are fantastic. We were customers at the Ammanford Espresso Bar, long before we were wholesale customers. Seeing Coaltown coffee in a café or restaurant assures you of good coffee.
Secondly, supporting a local business as you’re right around the corner. How can we ask people to support locally if we at Blas don’t do it ourselves.
Thirdly, the wholesale support package is amazing at Coaltown. In three years, we’ve served over 55,000 coffees with only three hours of downtime, thanks to their excellent support. I can’t imagine anyone else really having that level of support or even offering it.
WHAT DO YOU LOVE THE MOST ABOUT WHAT YOU DO?
100% seeing people enjoy what you’ve created. It’s rewarding to see customers return again and again. Knowing that Blas started as a blank canvas and became a place people love to visit is incredibly fulfilling.
WHAT DO YOU LOVE THE MOST ABOUT AMMANFORD?
The close-knit community. Recently, a local incident saw the entire community come together in support. It’s such a lovely town and place to be.
DESCRIBE YOUR RELATIONSHIP WITH COFFEE IN THREE WORDS:
-Calming.
-Focus, if there is any tasks or troubles you have having a cup of coffee focuses my mind.
-Energy, a balance of energy.
WHAT’S YOUR GO-TO COFFEE ORDER?
Flat white, every time! I love the balance with the sweetness of the milk.
WHICH COFFEE SHOP OR FOOD ESTABLISHMENT HAS LEFT THE BIGGEST IMPRESSION ON YOU?
In terms of coffee, Watch House in London stands out for its perfect setup and aesthetic. For food, Pasture in Cardiff is outstanding with its high-quality ingredients and fantastic vibe. It’s a reminder of the standards we strive for at Blas.
HOW DO YOU BREW COFFEE AT HOME?
I’m rarely at home—if I’m not at Blas, I’m at the Coaltown Roastery in Ammanford.
AS A BUSINESS, WHAT ARE YOU MOST EXCITED ABOUT RIGHT NOW?
There are big secrets to be revealed! Otherwise, we’re excited for nice weather, though it hasn’t arrived yet. We’re also looking forward to the next Jac Lewis Foundation Charity Quiz evening. The foundation, set up in memory of a local lad who took his life, offers mental health support in our area. Last February, we hosted a tapas and quiz evening, raising over £1000. We hope to host another soon, supporting this local charity close to many hearts.
