

El Chollo
CONEXH S.A., established on February 7th, 2021, aspires to be a trusted partner in the green coffee bean supply chain. Rooted in a five-generation family tradition of coffee production, they own ten farms in a renowned coffee-growing region. Over the years, they’ve fostered close ties with local coffee farmers, uniting 40 members under the banner of “Los Compaz.”
CONEXH’s General Manager, Carlos Mejia, also known as Chollo, an engineer with deep roots in the coffee industry, hailing from Tutule. He drives the operations, overseeing every step from farming and processing to the export of green coffee beans. Carlos, alongside his family, manages Finca El Chollo, a farm with around 65,000 coffee trees—a standard size in the Honduran coffee landscape.
The cooperative has incorporated the processing of freshly harvested coffee beans, employing a distinctive traditional sun-drying method across a 10-hectare area. Following the picking process, cherries undergo quality sorting and are subsequently processed through a depulping mill. The coffee cherries then undergo a 3-day fermentation period. The mucilage surrounding the beans is then removed with water over a 30-hour period. Finally, the beans are dried and packed at 11% moisture content, allowing the flavours to thrive.

Grind Information
Please note, our espresso grind is suitable for most home coffee machines. If you have a commercial grade coffee machine, E.g. Linea Mini, then please add an order note in your basket, requesting commercial espresso grind.
We would always recommend that you use a grinder at home in order to achieve the grind suitable for your particular brewing equipment, but we appreciate that this is not always possible, so we do offer our coffee as ground. We offer grind options that we think would achieve the best results from the numerous variations of machines and equipment that are available to consumers, but we cannot guarantee that our ground options will work with every unique set up.
